Coconut Crepes


Yesterday I had a hankering for crepes, but T. and I got a little side-tracked along the way with Sushi, Cider & Gelato!  I made up for it today with my first of many gluten-free & dairy-free crepe creations.

A crepe that my gluten-free belly can enjoy too!

Coconut Crepe & Mango Slices
Dollop of Coconut Bliss, Drizzle of Tupelo Honey
&
Sprinkle of Coconut Sugar

  2. Thanks Becky! Yes, coconut flour was the star in this batch. I still have a bit of testing to go. Coconut flour is a bit tricky as it's quite absorbent so definitely requires mixing in a few other gf flours.

  3. Interesting! How do you combat its stickiness? Have you used it in gf cake or quickbread? I look forward to hearing more about coconut flour!

  4. It's important to always mix coconut flour with other gf flours, in fact coconut flour really can only hold up to about 20% of a gf flour mixture. It's super absorbent so definitely add more than the average amount of liquid when developing recipes with coconut four. Check out my Sweet Potato Coconut Cupcakes which were my 1st post on MyGFbelly! I find it's better to use a lite coconut milk with coconut flour as it doesn't absorb as fast as the traditional creamy coconut milks. Hope this helps!
